Makes: Enough icing for 1 cake or 12-14 cupcakes.
You will need:
- 225g icing sugar
- 100g softened butter or dairy free alternative
- Electric beater
- Vanilla extract (optional)
- Food colouring
In a medium bowl beat the softened butter for 10mins or until it is smooth, pale and fluffy.
Slowly add the icing sugar, about 1/2 cup at a time. Continue to beat while adding.
If adding vanilla extract or colouring, add it now.
