Think crisp on the outside and fudgy on the inside, these soft and chocolatey crackle cookies are like brownies in cookie form!
Time: 30 minutes / 4 hours or overnight setting time
1x Hill St Chocolate Base 1/2 cup neutral oil (vegetable oil or rice bran oil)
- 2 eggs
100g chocolate, melted 1/2 cup icing sugar
Gently melt chocolate on a low heat or in short bursts in the microwave. Whisk together oil, eggs and melted chocolate.
Add in Hill St Chocolate Base and mix until combined. Mixture should be like a brownie batter consistency. Cover and set in the fridge for 4 hours or overnight. Preheat the oven to 170 degrees C fan bake.
Use a table spoon measurement to spoon cookie batter and roll into balls. Roll in icing sugar (be generous!) and place on a lined baking tray.
Use any extra icing sugar at the end to re-coat any cookies. Bake in the oven for 10-12 minutes. As they will be soft, leave on the tray to cool for 5-10 minutes and then transfer to a wire rack.
