Crackle Cookies

Think crisp on the outside and fudgy on the inside, these soft and chocolatey crackle cookies are like brownies in cookie form! 

Time: 30 minutes / 4 hours or overnight setting time

Yeilds: 18 cookies

You will need: 

  • 1x Hill St Chocolate Base 

Wet: 

  • 1/2 cup neutral oil (vegetable oil or rice bran oil)
  • 2 eggs
  • 100g chocolate, melted 
  • 1/2 cup icing sugar

Method:

  • Gently melt chocolate on a low heat or in short bursts in the microwave. 
  • Whisk together oil, eggs and melted chocolate.
  • Add in Hill St Chocolate Base and mix until combined. Mixture should be like a brownie batter consistency.
  • Cover and set in the fridge for 4 hours or overnight. 
  • Preheat the oven to 170 degrees C fan bake.
  • Use a table spoon measurement to spoon cookie batter and roll into balls.
  • Roll in icing sugar (be generous!) and place on a lined baking tray.
  • Use any extra icing sugar at the end to re-coat any cookies. 
  • Bake in the oven for 10-12 minutes. 
  • As they will be soft, leave on the tray to cool for 5-10 minutes and then transfer to a wire rack.
