Jessie's Honey Walnut Banana Loaf

Jessie loves all things Bees! She kindly chat to us about her life and her business BEES UP TOP. This is her spin on our Banana Bread. 

Gluten free, dairy free, refined sugar free. 

Bake time: 40-45 minutes

You will need:

  • 1x Hill St Wholefoods Banana Bread
  • 3 x Medium Bananas 
  • 3 large eggs or egg substitute 
  • 1/2 cup coconut oil
  • 1 cup walnuts, roughly chopped into small pieces
  • 1/2 cup of Bees Up Top Rescue Honey 
  • Your choice of yoghurt to serve

     Method: 

    • Pre-heat oven to 160 degrees C on fan bake. Line and grease a 15cm x 9cm loaf tin with baking paper.

    • Roughly chop walnuts and set aside. Empty banana bread mix into a large mixing bowl. Set aside.

    • In a separate bowl whisk eggs and coconut oil together. Mash 2 bananas and add to the eggs and oil. Pour into the large mixing bowl with the banana bread mix. Stir with a wooden spoon until it comes together.

    • Transfer into the lined loaf tin. Take the skin off the third banana and slice down the middle horizontally. Place on top of the mixture. Add the walnuts and drizzle 1/4 cup of honey over the top.

    • Bake for 40-45 minutes, until a skewer comes out clean. Drizzle the other 1/4 cup of honey over the loaf. Serve with coconut yoghurt
