
Peanut Butter Lava Cakes
Looking for an impressive dinner party dessert? Look no further. Our Peanut Butter Lava Cakes are ooey, gooey and downright decadent. They’re guaranteed to wow even the most discerning dinner guest.
Total time: 30 minutes
You will need:
1/2 cup Hill St Chocolate Base 110g butter + extra for brushing ramekins 170g milk chocolate or 50% dark chocolate 2 egg 2 egg yolk 4 tbsp milk
3 tbsp butter, softened (room temperature) 4 tbsp smooth peanut butter 1.5 tbsp icing sugar Extra chocolate for the middle
Preheat oven to 200 degrees fan bake. Brush ramekins with butter and dust with a Hill St Chocolate mix. Tap out excess into bowl.

Mix peanut butter with softened butter and icing sugar. It shouldn’t be too runny. If it is, just pop it in the fridge. Set aside.
Melt chocolate with butter in microwave (short bursts) or stove top, until just melted. -
Beat eggs with an electric beater until lighter in colour and fluffy. Fold in half a cup of Hill St Chocolate Base, milk, melted butter and chocolate until it comes together. Spoon chocolate mix into base of ramekins, until 1/3 of the way. -
Spoon peanut butter mixture into the middle along with a square of chocolate and top with another layer of chocolate mix until 2/3’s full. Bake for 12-15mins, should be slightly cracked on the top and still jiggle a little in the middle. -
Allow to cool for a few minutes before turning out. Tip: run a sharp knife around the edge before turning out.
Serve with cream or ice cream.
